Quote the date from material acknowledgement plus machining plus a day you believe for incoming check. Two weeks that starts before the bar exists is a late job you already signed.

Offer a split if they can accept a stocked substitute in writing, with the substitute named. Do not swap 17-4 for 304 in the quote's fine print.

Put the material lead time in the quote as its own line so purchasing can see it. A single 'ship date' hides the thing that will slip.
